Of beans and blooms

In other news, I made a great chili for dinner last night. My secret ingredients are ancho chile sauce (red enchilada sauce, for that slightly bitter, rich chile flavor) and yellow hominy. I adore the texture of the hominy and they look great too, all puffy and yellow. The Indian Woman Yellow beans I used were a tad elderly and were taking their sweet time to soften up. I hereby resolve to cook all beans within 2 years of buying/growing. They keep for longer, but can become recalcitrant about softening up.
