squash soup
Feb. 15th, 2009 08:40 pmIt's a cold and rainy night, so I made a squash soup, using leftover roasted squash, ham chunks from the freezer, wild rice pilaf from the freezer, plus some sauteed onions, ham stock, and seasonings. It was good and I feel virtuous for having used up leftovers/freezer items. Of course, the extra soup was put back into the freezer for future meals, but that's different because it's ready to eat now.
I'm still tired out from this stupid cold. It's been years since I've had one that dragged on like this. I have a voice again, as long as I don't actually use it. My throat is sore from the constant post-nasal drip. The sinus infection is mostly yet not completely gone. I'm very low energy (not my usual state), so that's why I was particularly pleased that I managed to think up and put together the squash soup. Maybe tomorrow? I'm tired of this!
