Radicchio salad

Salad tonight was shredded radicchio dressed with a walnut oil-sherry vinegar vinaigrette, and topped with shredded Comte cheese and toasted walnuts. A straight radicchio salad is rather challenging, but the rich flavors of the cheese and walnuts and the sharpness of the sherry vinegar provided the necessary counterpoint. Many recipes call for sweet ingredients like balsamic vinegar or fruits, but to my mouth, the sweetness accentuates the bitterness of the radicchio in a bad way.
So that was half of the radicchio head. I think the other half is destined for a frying pan with bacon.
Health update: I'm nearly well! I still have annoying mucous production clogging my vocal chords occasionally. I guess I should be happy that my body is making sure the last of the sinus infection is really, truly cleared out. But gads, I'm getting tired of this. Still, better every day. I even went to the gym today.
Btw, the only thing that really helped with the nighttime coughing was Chloraseptic spray. I even used it last night still. Thanks,

Date: 2009-02-21 04:05 am (UTC)I used Elderberry lozenges (Sambucus), Emergen-C, Quercetin chews (FRS brand), and vegetarian hot-and-sour soup from Chef Chus to get over the worst of it.
