Adventures in cooking -- yesterday, [livejournal.com profile] spikeiowa and I drove over to Half Moon Bay, and we each bought whole salmon direct off a boat. Got it filleted at the nearby shop (worth every penny of the $5 charge). I made salmon stock today with my trimmings, destined for a salmon bouillabaisse tomorrow night. We grilled salmon last night, ate poached salmon tonight (gleaned from the meaty stockpot trimmings), will have a bit more as part of the bouillabaisse tomorrow, and froze the remainder. We Are Set.

But the true adventure was the skeins of salmon roe they gave us along with the salmon. Normally they sell them, I think, but it was getting late and they apparently had a lot left. So we each were given a bagful. (Skeins are what the sacs full of roe are called. I sincerely doubt you could knit them.)

After much searching (made difficult because most recipes were how to use already prepared roe, not how to prepare it in the first place), I found first treatment 1, then treatments 2 and 3:Read more... )

Next experiment -- freezing them. Because wonderful though our lovely lunch today of salmon roe three ways was, I can't see it happening again in the immediate future. It would be a shame to O.D. on ikura.
